Tasting notes
Straw-yellow colour with greenish tints. High aromatic intensity with tropical citrus notes, lychee and a light touch reminiscent of green chili. On the palate: fresh and clean, with balanced acidity and a persistent finish.
Vinification
The grapes are harvested mostly at night to keep the fruit cool. They are gently pressed immediately, protecting the juice from oxygen with inert gas. Fermentation proceeds with clean, previously settled juice at low temperature.
Ageing
In stainless steel tanks until bottling.
Food pairing
Excellent as an aperitif; pairs with fish and seafood, cheeses and fresh vegetables. Serve between 9-10°C.
