Tasting notes
Very deep and dense red in colour. A stunningly inviting perfume of blackcurrants, rose petals, iodine, violets, fine spices, dried herbs and cedary tones. On the palate: a long, silken and seamless finish with a fine, powdery tannin profile.
Vinification
The Cabernet Sauvignon comes from a 2.7 ha block planted in 1992 with two clones selected for structure and depth of flavour. The Shiraz comes from two old Barossa blocks, one planted in 1920 and the other in 1955. Matured for 18 months in 21% new French oak barriques and hogsheads, the balance in older French oak.
Ageing
18 months, 21% new oak.
Food pairing
The Caley takes time to reveal its true character - enjoyable on release, it will live on for decades in the cellar.
