Tasting notes
Straw in colour with hints of green. Elegant aromas of white stone fruit, lemon zest, jasmine and nougat, layered with flinty minerality and lightly toasted almonds. On the palate: crisp acidity balanced by creamy texture, with a long finish of hazelnut and vanilla.
Vinification
The grapes come from cool, high-elevation vineyards with granitic, mica schist soils in Eden Valley. Half of the blend was matured for 10 months in French oak barriques (15% new), the balance in older oak.
Ageing
10 months, half in French oak.
Food pairing
Roasted chicken with herbs and garlic, pork tenderloin with apple reduction, mushroom risotto, or a creamy butternut pumpkin soup with sage.
