Tasting notes
Dark cherry, plum, black and blue berries with vibrant spice. Fresh and structured, with a supple core of dark fruit, a note of pencil shavings and a hint of cocoa. Concentrated and cellar-worthy.
Vinification
Each variety was individually vinified in a combination of submerged cap, roto and open stainless-steel fermenters. The wine was racked into first-fill 300-litre French and American oak.
Ageing
28 months, after which it was blended and bottled.
Food pairing
Slow-roasted lamb, rich oxtail or duck, robust chicken and pasta dishes, hearty soups, and mature cheeses.
