Tasting notes
Bold and forthright on the palate, with a solid, muscular structure. Rich, ripe fruit - blueberry, blackberry and juicy cherries - balances the power of the tannins, while dried herbs, cocoa and vibrant spice add depth to the long finish.
Vinification
Each variety was individually handled and vinified: fermented on the skins in temperature-controlled stainless steel tanks at 25-28°C for around 14 days, then drained from the skins and pressed.
Ageing
Each component was independently matured in French oak for 14 months, then a portion of the blend was returned to barrel for a further 3 months for added fullness and roundness.
Food pairing
Pork neck steaks in a mustard and cumin-studded creamy sauce, or a Middle-Eastern lamb tagine.
