Tasting notes
Opulent layers of dark fruit, blackberry and plum, lifted by savoury notes of black olive and a touch of black pepper spice. On the palate: bold and generous, framed by grippy tannins and a burst of juicy freshness.
Vinification
Grapes harvested during February and March, fermented in temperature-controlled stainless steel tanks at 24-27°C for 14 days.
Ageing
12-15 months, mostly in French and some American oak.
Food pairing
Pork and prune stew, slow-braised pot roast, beef olives, or a classic carvery.
