Tasting notes
Deep, inky crimson with a vibrant purple rim. Aromas of blackberry and ripe plums layered with clove and nutmeg. On the palate: rich and generous, with dark berries and plums wrapped in suede-like tannins, leading to a long, plush finish.
Vinification
The grapes come from vines ranging from young to old (over 35 years), planted in a range of soils from red brown earths and sandy loams to dark clay. The wine was matured for 10 months in French and Hungarian oak hogsheads, 12% new.
Ageing
10 months in French and Hungarian oak, 12% new.
Food pairing
Slow-cooked beef short ribs with rosemary and garlic, alongside baked potatoes. Smoky eggplant and lentil moussaka.
