Tasting notes
Wine with a deep ruby color and aromas of red fruit. It has a full body with tight tannins, which become smoother quickly in the ageing process. One can also find smoky- earthy notes, floral-herbal perfume, and often jam-like sweetness. A wine with a long finish and ageing potential.
Vinification
The beginning of the grape harvest is postponed until the moment when there is a partial wilting of the grains. In this way, a better concentration of aromas and easier extraction of the body and colour from the grape skins are obtained. The individual fermenters are subjected to different fermentation regimes. Malolactic fermentation takes place in the barrels. Combining different techniques for vinification and ageing in a balanced way enriches the complexity of the wine.
Ageing
In French oak barrels for 7-8 months.
Food pairing
Excellent with a variety of dishes - cured meats, mature cheeses, gourmet burgers and barbecue.
