Tasting notes
Color: dark garnet. Aromas of sweet tobacco and raspberry. On the palate: pomegranate and spices. Great balance, freshness and fine tannic structure. Long and juicy finish.
Vinification
Low yield and hand picking early in the morning at low temperature. This is followed by cold maceration for 48 hours. 40% of the juice is fermented in French oak and the rest in stainless steel tanks with pumping overs twice a day. Maceration follows for five days.
Ageing
In French oak barrels (40% new) - a combination of light and medium roasting.
Food pairing
Excellent with grilled meats or mushroom risotto.
