Tasting notes
Colour: pale pink. Aroma: floral aroma of roses, raspberries, fruity. Flavour: well balanced, tangy and fresh.
Vinification
Plucking of the bunches. Light cold maceration. Natural draining. Fermentation at a controlled temperature of 12- 13°C in stainless steel tanks. No malolactic fermentation. Batonnage once a week until bottling. Cold stabilization.
Ageing
In stainless steel tanks.
Food pairing
First courses and risottos, white meats and poultry in general, toasted polenta with herrings, fresh cheeses and fish.
