Tasting notes
Deep, red colour with soft orange rim. The nose is mature and developed with notes of tea and skin, dried chokeberry with black pepper, dark chocolate. Intense in the mouth with melted tannins, mature, long and elegant wine.
Vinification
The grapes are picked and selected by hand from 30-year- old, strongly reduced vineyards. Cold maceration at low temperatures for a period of 15 days. Fermentation with partial carbonic maceration. Long post maceration at high temperatures.
Ageing
The wine matures for 7 months in new French oak barrels of 225 litres. The wine ages additional 3 years in bottle before being released on to the market.
Food pairing
Pairs well with cured red meats, game dishes, spicy cheeses.
