Tasting notes
The colour is deep, ruby red. The nose is complex, still young with hints of black olives, sweet vanilla, flowers and iodine. Dry and firm body, powerful and spicy. Long finish with a flavour of pleasant fruity ripeness.
Vinification
Upon entering the winery, the grapes are sorted - first as bunches and then as berries. The fermentation is of whole, uncrushed berries. Vinification is carried out with slow extraction in oxygen-free tanks with precise temperature control. Contact with the skins is about 3 weeks. Malolactic fermentation is carried out in the barrels.
Ageing
In French oak barrels for 10 months.
Food pairing
Excellent with a variety of dishes - cured meats, mature cheeses, gourmet burgers and barbecue.
