Tasting notes
Very pale, light peach colour in the style of Provence. Complex nose with hints of candied citrus fruit and fresh pink grapefruit, sweet vanilla and hay. Fresh, firm and juicy body with a long, slightly spicy and smoky finish.
Vinification
The grapes are picked early in the morning in small boxes of 10-12 kg. This is followed by direct pressing with minimal extraction of colour and harsh phenols, preservation of the freshness and aromatic characteristics of the varieties participating in the blend. Fermentation takes place in stainless steel tanks for about 3-4 weeks at controlled temperature and in an oxygen-free environment in order to preserve the varietal aromas.
Ageing
5 months on the fine lees in stainless steel vats.
Food pairing
Pairs well with salads with seafood, fish delicacies and various cheeses.
