Tasting notes
A refined wine, well appreciated in the whole world. A beautiful golden colour and a great aromatic palette: honey, linden flower, hazelnut butter, sometimes even chamomile or hawthorn. On the palate, a silky roundness. Long on the aftertaste, with flavours of yellow plum and gingerbread.
Vinification
Very slow pressing so as to respect fruit. Fermentation under strict temperature control. No added yeasts or enzymes are used. The wine goes directly into barrels after decanting it to reduce sediment.
Ageing
In French oak barrels (25% new) for 12 months.
Food pairing
Excellent as an aperitif or paired with oysters or other seafood, goat cheese, smoked trout, pork tenderloin or sushi.
