Tasting notes
Deep, opaque ruby colour with a garnet rim. An amazing richness of aromas - floral violet perfume tones, followed by black dried fruits - sour cherry, chokeberry and blackcurrant, accompanied by slightly smoky caramel. The taste is smooth, soft, juicy, fresh, strong, concentrated and spicy. The finish is dominated by cherry freshness and a sense of perfectly integrated oak.
Vinification
24 hours of cold maceration. About 30% of the juice are taken out to make rose, this concentrates the colour and aromas. 7 days of alcoholic fermentation carried out in a stainless steel tank. Every three hours during fermentation, the wine is pumped over, breaking the cap. Full malolactic fermentation is carried out in oak barrels before ageing.
Ageing
24 months in oak barrels of 225 litters.
