Tasting notes
Deep, garnet colour. Rich and complex aroma with hints of red berries, black pepper and light smoke. Fresh and firm body with delicate raspberries, pepper, leather and tobacco notes.
Vinification
Fermentation is carried out in a stainless steel tank. 24 hours of cold soak. Atypical yeasts are used to start fermentation and it is completed with cultivated yeasts. This is done in order to extract fruit aromas.
Ageing
14 months in oak barrels of 225 litters.
Food pairing
Great with game, tomato-based dishes and ripe cheeses.
