Tasting notes
Deep, dark ruby colour. Rich and complex aroma with noticeable notes of black berries, vanilla and spices. Fresh and tight body with a balanced, smoky finish. There are hints of blueberries, resin and prunes.
Vinification
Fermentation is carried out in a stainless steel tank. 24 hours of cold soak. Atypical yeasts are used to start fermentation and it is completed with cultivated yeasts. This is done in order to extract fruit aromas.
Ageing
18 months in oak barrels with regular stirring.
Food pairing
Tomato-based dishes, pasta, meat and soft cheeses.
