Tasting notes
Deep, dark ruby colour. Rich and complex aroma with subtle notes of black berries, basil, black pepper and earth. Fresh and firm body with a balanced, slightly smoky finish. There are hints of blueberries, resin and prunes on the palate.
Vinification
Fermentation is carried out in a stainless steel tank. 24 hours of cold soak. Atypical yeasts are used to start fermentation and it is completed with cultivated yeasts. This is done in order to extract fruit aromas.
Ageing
6 months in oak barrels with regular stirring.
Food pairing
Tomato-based dishes, pasta, meat and soft cheeses.
