Tasting notes
Pale lemon colour. A varietal nose with tropical fruit – passion fruit and fresh citrus fruit – grapefruit notes as well as a hint of minerally. A fresh and elegant body with a pleasant, long and fruity finish.
Vinification
Maceration with the skins (8-12 hours). Pressing. Racking. Cold stabilisation (8/10°C) for a few days – Reincorporation of filtered with the fine lees. Addition of yeast. Fermentation between 16-18°C.
Ageing
On fine lees for a few weeks. Assembling and filtering.
Food pairing
Excellent in combination with a variety of dishes - salads, appetizers, fish and seafood, white meats and cheeses.
