Tasting notes
Deep, ruby-red colour. Fruity aromas of cherry, red fruits, tobacco and cedar wood. On the palate, the wine is soft and warm, a firmly structured wine, balanced and persistent.
Vinification
Manual harvest in small crates, followed by careful pressing with a pneumatic press. Fermentation takes place with selected yeasts at a controlled temperature for a period of 10 days. Batonnage is carried out every 15 days until bottling.
Ageing
24 months in large casks of French oak
Food pairing
Pasta entrees with elaborate sauces, grilled red meats, braised roasts, lamb and game, well ripened non piquant cheeses.
