Tasting notes
Brilliant, deep colour with crimson undertones. An elegant bouquet of aromas of wild black cherry, black forest berries - blackberry, blueberry, pepper and noble notes of tobacco and eucalyptus. On the palate, black pepper and hints of chocolate are beautifully integrated into the soft body with velvety tannins.
Vinification
24 hours of cold maceration. About 30% of the juice are taken out to make rose, this concentrates the colour and aromas. 7 days of alcoholic fermentation carried out in a stainless steel tank. Every three hours during fermentation, the wine is pumped over, breaking the cap. Full malolactic fermentation is carried out in oak barrels before ageing.
Ageing
12 months in oak barrels of 225 litters - Bulgarian, French and Bulgarian oak.
