Tasting notes
Light pink robe with ruby reflections. A gourmet and spicy nose with notes of small red fruits. A round, harmonious body with a spicy, mineral finish.
Vinification
The grapes are picked exclusively at night between 4 am and 9 am to preserve their full aromatic potential. The parcels are checked once a week to ensure the grapes are picked at perfect maturity. Direct pressing of the grapes in an oxygen-free atmosphere is followed by fermentation at low temperatures.
Ageing
Maturation on the fine lees to bring fullness and complexity.
Food pairing
Pair with spicy dishes, baked fish and seafood, or a summer barbecue.
