Tasting notes
Bright straw yellow colour with greenish hues. On the nose: strong aromas of citrus fruits - lemon peel and lime, accompanied by hints of white flowers. These aromas later develop into more mature exotic fruits such as papaya with a slight sense of smokiness. Vital body with long-lasting aroma and long finish.
Vinification
Whole bunch pressing, static racking. Fermentation in thermo- regulated tuns for one to four months.
Ageing
Matured on lees for eight months.
Food pairing
Calamary tempura and crunchy vegetables, Asian dishes, salmon fillet, lobster with citrus fruits, goat cheese.
