Tasting notes
Pale golden colour with beautiful highlights and medium density. Nose, dominated by ripe stone fruit - apple, quince and notes of honey, accompanied by smoky notes. Body with a flavour profile that repeats the nose and a long finish.
Vinification
Whole bunch pressing, static racking. Fermentation in thermo- regulated tuns for one to four months.
Ageing
Matured on lees for eight months.
Food pairing
Caesar salad, foie gras, baked pears, fillet with cream, soft cheese.
