Tasting notes
Lemon colour with greenish hues and medium density. The nose is dominated by jammy aromas of apricot, white peach and citrus, accompanied by floral notes. After ageing, one finds aromas of ginger, cardamom and roses. A body with a recurring rich and characteristic flavour profile and an extremely long finish.
Vinification
Whole bunch pressing, static racking. Fermentation in thermo- regulated tuns for one to four months.
Ageing
Matured on lees for eight months.
Food pairing
Amazing as an aperitif but also with foie gras mature cheeses, Asian food, cake and desserts in general.
