Tasting notes
Beautiful colour of old gold with amber hues. Rich and attractive aroma of raisins, dried fruits, honey, vanilla, caramel and exotic spices. Sweet and very soft taste, with preserved freshness, well harmonized with the sweetness. Very long aftertaste, dominated by dried fruit. An exceptional wine worthy of a prestigious collection.
Vinification
Very ripe grapes were picked by hand at a time when the sugar content was at least 24%. The fermentation took place in large wooden barrels. When the sugar in the fermentation must had dropped, alcohol had been added, which stopped the fermentation, preserving the grape sugar and increasing the alcohol content of the wine.
Ageing
Year after year, while maturing in oak barrels, the precious liquid was stored in the cellar during the winter and sat in the open under the Melnik sun from early April to late October. When accidentally discovered in 1998, more than 1/3 of the volume of each barrel was missing as a result of evaporation, leaks and carelessness. These decades of oblivion, however, create this unique magical substance - two Bulgarian grape varieties, Bulgarian winemakers and lost and rediscovered… in a very Bulgarian way. After its discovery in 1998, the wine was bottled without further processing and without being filtered.
