Tasting notes
Beautiful ruby red colour. Rich on the nose, with hints of plum, blueberry and cocoa. On the palate - balanced with sweet spice and ripe tannins.
Vinification
This wine goes through an extensive cold maceration for 2-7 days at 9 C. The juice is then fermented using wild yeast for 10-20 days with a post-fermentation maceration of 4-12 days.
Ageing
8-14 months in French oak barrels – first, second and third use.
Food pairing
Excellent with beef, lamb and pork on the grill, wild mushrooms or blue cheese.
