Tasting notes
Deep, dark red colour. Spices and mature red fruits on the nose. Round tannins with powerful complexity on the palate. A rich and harmonious wine with notes of mature plums, hazelnuts, red fruit and a long finish.
Vinification
The grapes are hand-picked and sorted on tables. They are then put into vats for 18 to 21 days with regular pumping overs and punching downs, tasting the must every day during fermentation to ensure the best extraction. At the end, the wine is racked into oak vats for the malolactic fermentation.
Ageing
In large oak casks and barrels for 12 months of ageing before blending. Bottling takes place 6 months later.
Food pairing
Red meat, game - birds and cheese.
