Tasting notes
Ruby red colour. Aromas of ripe blackberries and plum, enriched by notes of coconut, vanilla and chocolate. On the palate the wine shows great complexity and a fine structure with soft, supple tannins and a long finish.
Vinification
Ripe grapes are destemmed and inoculated with various strains of yeast to maximize complexity. Gentle pump-overs follow during fermentation to extract colour and flavour and produce soft, supple tannins.
Ageing
Aged 12 months in 25% new French oak, 8% new American oak and 67% neutral oak.
Food pairing
Enjoy it with beef tenderloin or pasta.
