Tasting notes
Deep violet colour with purple reflections. Intense aromas of ripe cherries and blackberries, violets and a touch of mocha and cinnamon. Great concentration on the palate with well-integrated, smooth tannins and lively acidity. A long finish with hints of minerality.
Vinification
Extensive cold maceration for 5 days at 9°C to extract aroma compounds. The juice is then fermented using wild yeast for 12 days with a post-fermentation maceration of 19- 22 days.
Ageing
12 months in French oak. Barrel selection varies depending on vineyard and vintage – first, second and third use barrels.
Food pairing
Grilled steak, salmon, and pasta with red sauce.
