Tasting notes
Light, lemon yellow colour with green hues. Fresh and fruity on the nose, with notes of lemon, grapefruit, pineapple and white flowers with accents of vanilla and honey. Complex on the palate with good balance and fresh acidity, enhanced by strong minerality. A long and fresh finish.
Vinification
Whole cluster pressed; fermented, sur lies, in barrels and stainless steel. Wild yeasts. 40% does not undergo malolactic fermentation.
Ageing
10 months in French oak. Barrel selection varies depending on vineyard and vintage – first, second and third use barrels.
Food pairing
Rich seafood risotto, roasted chicken dishes and riper cheeses.
