Tasting notes
Deep violet colour, with a purple rim. Elegant and complex on the nose with notes of ripe cherries and blackberries, violets, spices - pepper, leather and a touch of vanilla. Full and rich on the palate with elegant and ripe tannins, freshness and a silky, smooth texture. A long and memorable finish with a mineral character.
Vinification
Vineyard lots are harvested at different times to ensure optimal natural acidity and moderate alcohol levels. Whole berries are hand loaded into small format fermentation bins and 225-500 L barrels; lots from each vineyard are treated individually; fermentation and maceration last for 28-30 days; cold maceration. Wild yeasts. Alcoholic and malolactic fermentation in barrel.
Ageing
18 months in French oak with active battonage.
