The vineyards lie in one of the Cape's coolest wine-growing regions, barely ten kilometres from the ocean, which bathes the slopes in cool breezes and moist air. The grapes ripen slowly and completely. The name comes from the hills themselves. Varying altitudes and aspects, a Mediterranean climate and rich soils let each variety be planted exactly where it belongs. The first vintage was released in 1999, a joint venture between local farms and the then Distell, now HEINEKEN Beverages. The nine partner farms — Klein Roosboom, Ongegund, Hillcrest, Maastricht, Morgenster, Bloemendal, Hooggelegen, Welbeloond and De Grendel — all lie within ten kilometres of the cellar, continuing a wine-growing tradition centuries old.
