Set on a scenic hill in the heart of its vineyards, the Santa Sarah Wine Estate is built as a closed ecosystem in which flora, fauna and human activity are kept in balance. The winery runs on an autonomous off-grid system and is fully energy independent, drawing on photovoltaic solar power and giving priority to sustainability and ethical responsibility. The vineyards lie in the lands of the village of Goritsa, in the municipality of Pomorie. They occupy slopes ranging from 3 to 15 degrees, at around 100–130 metres above sea level, nestled in the foothills of the Stara Planina range. Varied soil profiles, exceptional biodiversity, a moderate climate and organic practices in the vineyards allow each wine to reveal the authenticity of its terroir. The Santa Sarah Wine Estate covers 29 hectares of vineyards in total, planted with 17 varieties carefully chosen to suit the site and its soils. The white varieties occupy 12 hectares — Sauvignon Blanc, Sémillon, Pinot Gris, Chardonnay, Traminer and Vermentino — while the reds cover 17 hectares: Merlot, Cabernet Sauvignon, Cabernet Franc, Mavrud, Pinot Noir, Syrah, Malbec, Carménère, Petit Verdot, Grenache and Mourvèdre.
